Food-grade xanthan gum powder is a white or light yellow powder with excellent thickening, suspending, emulsifying, and water-soluble properties. It also exhibits good thermal and acid/alkali stability and is widely used as a thickener and emulsion stabilizer in food processing. Food-grade xanthan gum powder is readily soluble in both cold and hot water, forming a neutral solution that is resistant to freezing and thawing. When exposed to water, food-grade xanthan gum powder disperses and emulsifies into a stable hydrophilic viscous colloid.
Suspension and Emulsifying Properties: Food-grade xanthan gum powder has excellent suspending properties for insoluble solids and oil droplets. The sol molecules of food-grade xanthan gum powder can form super-bound, ribbon-like helical copolymers, constituting a fragile, gel-like network structure. Therefore, it can support the morphology of solid particles, droplets, and bubbles, exhibiting strong emulsifying stabilization and high suspension capacity.
Water Solubility: Food-grade xanthan gum powder dissolves rapidly in water, exhibiting excellent water solubility. It dissolves particularly well in cold water, eliminating the need for complex processing steps and making it convenient to use.
Stability to Acids and Alkalis: Food-grade xanthan gum powder is highly stable to acids and alkalis. Acidic solutions of food-grade xanthan gum powder are quite stable at room temperature, and their properties remain unchanged for several months. Food-grade xanthan gum powder is also soluble in sodium hydroxide solution and has thickening properties. The resulting solution is very stable at room temperature. Xanthan gum can be degraded by strong oxidizing agents, such as perchloric acid and persulfate; degradation accelerates with increasing temperature.
Stability to Salts: Food-grade xanthan gum powder is miscible with many salt solutions, and its viscosity is unaffected. Under high salt concentrations, even in saturated salt solutions, it maintains its solubility without precipitation or flocculation, and its viscosity is almost unaffected.
Stability to Enzymatic Reactions: The stable double helix structure of food-grade xanthan gum powder gives it extremely strong antioxidant and enzymatic resistance. Many enzymes, such as proteases, amylases, cellulases, and hemicellulases, cannot degrade food-grade xanthan gum powder.
